Strawberry Chia Pudding

This mildly sweet and creamy protein-rich breakfast will help kickstart your energy and prepare your gut each morning – top with a seed mix, fresh berries, or anything your heart desires.

Creating variations of chia pudding has been a love practice to nurture my physical health and inspire creativity. This particular variation blends my love of strawberries with my need to reduce my sugar intake. I hope you get as much joy and nourishment from this meal as I do.


Chia means strength in Mayan; it was said that this superfood provided a Mayan warrior with enough energy for an entire day – thanks in no small part to the high fiber and protein contents in this nutrient-dense food.

         


Strawberry Chia Pudding Bowl Recipe


Ingredients:

  • 1 cup milk alternative, unsweet (hemp preferred)

  • 6 fresh, whole strawberries

  • 4 tbsp chia seeds


Directions:

  • Combine all ingredients in a blender; blend until smooth

  • Remove mixture from blender and place in a glass jar or container (I use wide-lid, 16 oz mason jars)

  • Let it sit for five minutes and stir again – it should be thicker stirring the second time

  • Seal in a container and refrigerate overnight


Serving Instructions: 

  • Add fresh fruit, like strawberries and blueberries, and protein seed mix on top – or whatever your heart desires, such as coconut flakes, cacao nibs, etc.

  • This recipe makes two to three servings of pudding
