For-the-Tummy Mango Peach Chia Pudding

This sweet and smooth pudding will help kickstart your energy and prepare your gut each morning – top with granola, fresh fruit, shaved coconut, honey, spices, or anything your heart desires.

It turns out that I'm not just emotionally sensitive, my physical body is pretty sensitive too. When I started to really listen to it, I recognized how food was affecting my body, my emotional state, my mindset, my energy levels... everything.


Let me clear, OF COURSE, I want the pizza... all the time - and, the tacos and the sushi and the burgers and the donuts and the cheeses - but, the recovery time and the recovery process started to take too much of a toll on me.

Eventually, I could not longer avoid my relationship with food. Both in the ways it physically affected my body and in the ways I used it to salve my emotional states. I wanted to eat things I enjoyed eating while learning to nourish my body and rebuild my energy levels.


The Aztecs were one of the earliest, if not the earliest peoples, to use chia as a staple in their diets. The Mayans and Tarahumara Indians were also believed to have cultivated and used chia seeds in their diets frequently. In fact, chia means strength in Mayan; it was said that this superfood provided a Mayan warrior with enough energy for an entire day – thanks in no small part to the high fiber and protein contents in this nutrient-dense food.

         


Chia Pudding Bowl Recipe


Ingredients:

  • 1 cup milk alternative, unsweet (almond preferred)

  • 1 cup frozen or fresh fruit

    • 1/2 cup peaches

    • 1/2 cup mangoes

  • ½ cup frozen bananas

  • ¼ cup vanilla protein powder 

  • 4 ½ tbsp chia seeds


Directions:

  • Combine all ingredients in a blender; blend until smooth

  • Remove mixture from blender and place in a jar or container that holds at least 1 ½ cups of liquid (I use wide-lid, 16 oz mason jars)

  • Stir mixture immediately and then wait five minutes and stir again – it should be thicker stirring the second time

  • Seal in a container and refrigerate overnight


Serving Instructions: 

  • I love to add some freshly sliced fruit on top with homemade granola to give it added texture and flavor

  • When I use mangoes, I also love to sprinkle on Ajika spice

  • When I use strawberries, I love to add a 1/4 tsp of cacao nibs

  • This recipe makes two servings of pudding

  • The pudding will keep in a sealed container in the fridge
